ABOUT DEW THEORY

Grown in Hudson, bottled by hand.

Lena Ortiz filling amber bottles at the workbench in the barn

Lena Ortiz started Dew Theory in 2019 with a south-facing wall of rosemary and a single recipe. Today she makes nine formulas in the barn at the back of the studio, sixty bottles of each, every week.

Nothing sits in a warehouse. If a formula sells out, it comes back with the next batch. Nothing is scented, and every ingredient on a label is explained in our glossary.

Rosemary
Grown along the south wall and cut every June.
Honey
Four hives behind the barn, harvested once, in late summer.
Aloe
Grown in our greenhouse and juiced the day we make a batch.
Yuzu
The one plant we don’t grow. It comes from a family orchard in Kochi, pressed cold within a day.
