"We started with a half-acre of vegetable beds and a wood-fired oven, and built the restaurant around whatever the ground gave back."
The Garden opened in 2018 on a stretch of land just outside Green Valley, founded by two farmers who wanted to cook the vegetables they grew rather than sell them at a stall. What began as a handful of tables beside the beds has grown into a full kitchen and dining room, but the habit never changed: the garden decides the menu, not the other way around.
Nearly a decade on, the same two founders still walk the rows most mornings, and the restaurant still closes on Mondays so the land — and the kitchen — can rest.

"We don't build menus from recipes. We build them from what arrives at the kitchen door each morning."
